4 Easy Vegetarian Recipes I Always Make

I’m not much of a cook and I don’t have time to be much of a cook. I think back to how my mom worked full time and always used to have homemade lasagna, mashed potatoes, etc. on the dinner table and I have no idea how she had the energy to do all of that. Gotta love moms, right? Well here are 4 of my easiest recipes that I pretty much make biweekly – if you’re a lazy cook like me, you’ll love these!

Vegetarian Chili (makes around 4 servings)
Ingredients:
-1/4 bag of Morningstar Chipotle Black Bean Crumbles
-1 can kidney beans
-1 (15 oz) can of diced tomatoes
-Tomato paste to taste
-Cumin to taste
-Chili pepper flakes to taste

Toss it in the crockpot for 4 hours low or 2 hours high – serve with a dollop of greek yogurt and some cheese! It can come out somewhat watery so drain cans before putting in depending on how you like your chili.

Egg Muffins (Can also be made as crustless quiche!)
Ingredients:
– 6 eggs
– dash of almond milk
– any veggies
– any cheese

I try to use mostly egg whites for this so feel free to substitute. Grease muffin pan, beat eggs and almond milk, add veggies to bottom of cups, add eggs, top with cheese. Bake at 350 for 20 minutes.

Roasted Chickpeas w/ dill dressing
Ingredients:
– 1 can chickpeas
– olive oil
– Cumin, paprika, salt and pepper

– greek yogurt
– dill
– lime juice

Toss chickpeas in olive oil and spices, bake at 450 for 30 minutes. I don’t like my chickpeas crunchy, just roasted. I usually add them to a rice bowl and use the dill dressing. Combine greek yogurt and lime juice until you reach desired dressing consistency, add dill to taste!

Easy Cheesy Crockpot Rice
Ingredients:
– 1 cup minute rice
– 1 can condensed cheddar cheese soup
– 1 cup almond milk
– lots of broccoli

3 hours on high in the crockpot, may need to add more almond milk. Add some cheese on top before serving! I like this as a side to some fish or shrimp.

  1. ooo I love these, so easy and few ingredients are needed – totally my kind of recipe haha! I’d love to make some vegetarian chili and the roasted chickpeas with dill dressing (have no idea how that tastes). I don’t even know why I’ve never made the egg muffins before, I have all those ingredients in my fridge!! Thanks for sharing Rosie!
