3 Easy Vegetarian Meals With Trader Joe’s Products

You might not believe this, but I just shopped at Trader Joe’s for like the first time just a few weeks ago. I, of course, fell in love with it and bought a lot of things that people had suggested to me. Overall, it was pretty affordable and I was able to put together some easy meals since finding time to cook can be sort of a struggle.

1. Pesto Cauliflower Gnocchi
– Pesto
– Broccoli
– Trader Joe’s Cauliflower Gnocchi
– Sundried tomatoes

I ended up cooking the gnocchi a bit different than the instructions – I steamed it real quick in the microwave then pan fried to crisp it up. Mix in pesto, broccoli, and tomatoes and you have a hearty low carb meal!

2. Chicken-less Mandarin Orange Morsels
– Rice
– Broccoli
– Trader Joe’s Chicken-less Mandarin Orange Morsels

Follow directions for orange morsels and pair with broccoli and rice to fill you up – just like ordering chinese! Would be great for meal prepping.

3. Cauliflower Crust Pizza
– Pizza sauce
– Mozzarella
– Parmesan
– Garlic
– Olive oil
– Trader Joe’s Cauliflower Pizza Crust

Follow the directions to bake the crust, brush whole crust with garlic and olive oil before putting on toppings. Add pizza sauce, mozzarella, parm, and any other toppings you enjoy! The cauliflower crust does have a cauliflower taste so I suggest a lot of garlic and cheese to mask it.

There you have it, 3 full meals that can be made in 20 minutes or less and are actually pretty healthy!
